What do the knots going straight left or right mean? I see them all the time on alphas.

They’re the same knots as forward/backward but instead of tying the strings together you’re tying them onto base strings using one super long string that you don’t cut. I recommend watching some alpha tutorial videos if you want a clearer explanation on how they’re different from normal patterns
