How do they keep the threads from coming undone? I don't know how they tie the threads when they change color, the remaining thread that's left on the bracelet after finishing a pattern. How do they do it? Any tips?🥺

Usually people just cut them short and it usually won't come undone, especially if you used the flat alpha technique.

But don't they tie them from behind so they unravel? I don't know how to tie it.

No, usually people don't tie the loose strings on the back.

If you worry they may unravel after cutting, you can apply a thin layer of glue or transparent nail polish!
