help! I'm new to making alphas so what do should I do if a pattern has an uneven amount of base strings since one piece of thread turns into 2 once you fasten it to your dowel/ring/etc. with a lark's head knot-

You can use one end of the first leading string as the odd base string.

I usually either just make one extra lark’s head knot to make it even (like if it requires 17, then I have 18 base strings) and knot onto both of the strings if that makes sense (sort of like a shaped alpha). The other way I do it would be make it even again (18 instead of 17), then when you’re doing the pattern just incorporate the extra base string into the design using the clean back alpha technique/flat alpha. It’s hard to explain, but kinsey b demonstrates it really well in her “HOW TO: bookmark start for alphas” video around the ~3:10 mark. I would recommend watching that section of her video if you want to see that method demonstrated
