When I’m switching to a different color that has already been added into my bracelet. How do I go about switching? Does the new color go over the color I’m just getting done with? Or the other way around?

When your done using one colour put it under the strings that you will go to next. If you don’t need it again for that row bring it under and then to the top of your bracelet. If you are going to use it again in that row put it under the number of string before you will use it again. If that doesn’t make any sense both Kinsey_B and Masha Knots have really good tutorials on it. I’m not the best at explaining things.
