I always end up making my pattern too tall. I don’t know if the problem is the type of strings or the way I’m tying it. I stay pretty consistent with my knots, so I’m at a loss here 😩

This is very normal and a lot of people (including myself) experience the same thing. One thing that has helped me is having really loose knot tension so that they're maleable enough to push upwards at the end of each row. For this you can use a ruler, card, or anything with a hard straight edge.
